The curd that is added to it is the best thing because curd is a rich source of probiotic bacteria which keeps our stomach healthy and digestion is good.

Super soft dahi bhalla ingredients:
- 500 gm or half cup soaked urad dal
- half a teaspoon of baking powder
- 2 cup yogurt (curd)
- 1/2 teaspoon powdered red chili
- 1/4 teaspoon black salt,
- salt as required,
- 2 tablespoons cumin seeds or cumin powder
- 1 tablespoon chaat masala,
- 1/2 teaspoon grated coconut,
- 1/4 cup milk
- 1 tablespoon sweet tamarind sauce
- 1 handful pomegranate seeds
- 1 teaspoon Refined oil
- chopped green chili
- 1/2 teaspoon Raisins
- Sugar as required
- 1/2 teaspoon black salt
- 1 tablespoon green chutney
- 1 leaves chopped coriander leaves
- 2 pinches salt

Procedure to make Super Soft Dahi Bhalla:
- First of all, we will put urad dal in water and keep it overnight for at least 6 hours.
- Then we will drain the water and put the drained dal in the grinder and also add salt, cummin seeds, chili, and black pepper to it. We will keep checking now and then and add more water if needed, and then we will make a smooth paste.
- And then we will keep stirring the batter with our hands for 5-10 minutes until the mixture becomes fluffy and doubles in size and super light and And its color should also be a little light.
- Now we have to check whether our batter is ready to fry. To check this, we will put some batter in water in a vessel, and if the batter floats in the water then it is ready to fry.
- Now the batter of Super Soft Dahi Bhalla is ready.
Fry the Bhallas:
- To test whether the batter is perfect or not, drop some batter in water if the batter floats on the water, add salt to this and it’s ready to be fried.
- Now you can deep fry the Bhalla.
- We will fry the Bhalla till it becomes golden brown. In this way, we will fry all our bhalla batter. Then when all our bhalla are ready, we can also store them.
- Now, the question is, how long should dahi vada be soaked in water? we will put them in lukewarm water for 15-20 minutes so that they will swell and their size will increase. After 15-20 minutes we will gently remove the water from each Bhalla using our palms. And till then we will whisk 2-3 cups of curd and if we want we can add milk or even water to it.
- Now, we will put the bhalla in a bowl and cover it with whisked curd. And whatever little curd we have left, add whatever salt or spice you need to it, salt, etc.
- Now, we will take out all the bhalla from the refrigerator pour the remaining whisked curd over it, and sprinkle cumin powder, salt, pomegranate seeds, chili powder, green chutney, sev, and sweet chutney on top of it.
- And, now our super soft dahi bhalla is ready.

When people try to make a Dahi Bhalla recipe for the first time, it may not turn out so soft but it becomes soft with time.

- If you are using urad dal then use some moong dal as well for good flavour.
- When we grind the daal, we will not add too much water, we will keep it a little thick.
- When we grind the daal, do not forget to add salt to the batter.
- Before frying, always shake the batter with your hand for 5-10 minutes so that the batter becomes fluffy.
